The Mineral B Collection from De Buyer is one of their most popular ranges. Made in France from 2.5 to 3 mm thick, high quality steel, they are coated in a natural beeswax finish which protects the product in transit and also lends the range its name an associated ‘honey bee’ branding. They are suitable for all cooker types including induction, gas, electric and ceramic and can be used for flash cooking in ovens for 10 minutes at 200°C.
Mineral B Pro
New for 2020, the undistortable Pro Series elevates the classic Mineral B brand to professional kitchen standards. The coated steel handle found on the standard Mineral B range is replaced with a riveted stainless steel design meaning the Pro range is just as suited to prolonged oven cooking as it is on the hob. The Pro range is suitable for all hob types including induction.
The Carbon Plus collection is a heavy duty yet affordable range of steel pans. Ranging in thickness between 2.5 to 3 mm, these pans are designed for intense heat sources, coping well even in professional kitchens. They are suitable for all cooker types including induction, gas, electric and ceramic and can be used for flash cooking in ovens for 10 minutes at 200°C.

The Affinity collection of stainless-steel cookware from De Buyer uses an innovative 5-layer, single-piece construction for optimal heat conductivity and distribution. This 5-ply design features 3 core layers of aluminium sandwiches between 2 outer layers of stainless steel, bonded together into single sheets before being cut and formed perfectly into its final shape. Products in the range vary in material thickness from 2.3 to 2.7 mm depending on pan size and can be used on all heat sources including induction hobs as well as being suitable for oven cooking.

Where is De Buyer cookware made?

How do I season De Buyer carbon steel?
After thoroughly cleaning your new pan, De Buyer recommend pouring enough oil to form a 1mm layer of oil into your pan and heating it on the hob until the oil begins to smoke. It’s important to use an oil with a high flash point, such as vegetable or grape-seed oil. Be careful with the hot pan, empty the oil from the pan and rub the remaining oil into the pan surface. How do I clean De Buyer carbon steel?
After cooking, deglaze the pan by adding or some water to the pan and working away any food residues that remain. Dispose of the water a use hot water to clean down the rest of the pan. Dry straight away with a towel and buff some oil into the surface to protect it until next use. Carbon steel pans are NOT dishwasher safe, and you should also avoid detergents and abrasive pads or sponges in order to preserve the pans seasoning.
What's the difference between the 'Mineral B' and 'Mineral B Pro' ranges?
The Mineral B Element and the Mineral B Element Pro ranges are similar. The actual pans are the same with the difference being the pan handle. The standard Mineral B features a coated Iron handle, which means that degradation can occur if used for extended period of oven cooking. De Buyer recommend limiting oven use to 10 mins at 200°C. The Pro range comes with a stainless steel handle meaning that the time and temperature restrictions on oven cooking do not apply and the pans are considered to be fully ovenproof.
Can all De Buyer pans be used in the oven?
All our De Buyer pans can be used in the oven, however the Mineral B and Carbone Plus pans can only be used for limited ‘flash’ cooking due to the coating on their handles.
